About Us

Simply Maple began in 2001 as a state of the art oil-fired sugaring operation set up by Dale Gilman, a sugarmaker with a forestry degree.

Dale's vision is to maintain a healthy stand of sugar maple trees while producing the highest quality Vermont maple syrup.   

After the sugar woods were harvested in 2018, according to the forestry management plan, Dale used 3/16" tubing on a slope to create natural vacuum.  In 2022, he decided to scale back volume and traded in his oil-fired evaporator for a smaller wood-fired evaporator.  Dale is still committed to producing the highest quality Vermont maple syrup for our customers.
